Potato and Vegetable Cakes

Ingredients

  • 2 potatoes, grated
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 egg
  • 1 Tablespoon flour
  • Olive oil for cooking
  • Salt and pepper (to taste)

Directions

  1. Wash vegetables and grate. 
  2. Combine in a small mixing bowl with egg and flour.
  3. After all ingredients are mixed, shape the mixture in small patties.
  4. Place on a hot pan with oil and cook each one until each side is golden brown.
  5. Serve warm and enjoy.
