Pear and Goat Cheese Salad
10-ounce container of spinach or arugula
5 pears, washed and sliced
2 oz. soft goat cheese, crumbled
2 Tbsp. pecans
2 Tbsp. balsamic vinegar
3 Tbsp. olive oil
- Toss all the salad ingredients together in a bowl.
- Mix the balsamic vinegar and olive oil together and add the dressing to taste. You can keep the leftover dressing in the refrigerator for up to a week.
